Specialty beers can be either an ale or lager, but typically distinguished by some special ingredient(s) or process.
Fruit Beer
Pale with hints of fruit or berry color/very light malt flavor, often with high wheat content/very light hop flavor/light body; fruit flavors ranging from subtle to assertive, depending on the type and amount of fruit used/4-5%/vol.
Chili Beer
Pale golden color/light malt sweetness to balance heat of chilies/hop bitterness & flavor present; hop aroma low/light to medium body/4-5%/vol.
Honey Beer
Pale straw to golden color/light malt flavor, depending on the percentage of honey used/light hop flavor/light to medium body; honey character can often be detected in both the aroma & flavor/4-7.5%/vol.
Herb/Spice Beer
Pale to brown color/light to medium malt flavor/low hop flavor/may contain one or more of the following spices: ginger, coriander, spruce/4-8%/vol.
Holiday Beer
Amber to brown color/rich, often complex malt flavor/hop flavor & aroma subdued, but may be assertive/medium to full body/5-8%/vol.
Rauchbier
Amber to brown color/malty with smoked flavor that can be mild & elusive or assertive and nearly overwhelming/little hop bitterness; no hop flavor or aroma/medium to full body/4.3-4.8%/vol.
Smoked Porter
Brown to black color/rich malt profile with a complex combination of toasted, chocolatelike and smoked flavors/bitterness is moderate; hop flavor & aroma are low to medium/medium body/4.5-6.5%/vol.
Peat-Smoked Scottish Ale
Amber to brown color/rich, malty profile with earthy peat-smoked flavor similar to flavor of Lowland or Islay single-malt scotch/bitterness moderate; hop flavor & aroma low to medium/medium to full body/5-6%/vol.
Stone Beer
Amber to brown color/malty with caramel flavors/light hop bitterness, flavor & aroma/light to medium body; although not made with smoked malts, stone beer has a faintly smoky flavor profile/4.5-5.5%/vol.
