DEFINITION OF TERMS

Mash
The mixing of ground grain and hot water to produce sweet wort

Sparge
The spraying of mashed grain with hot water to retrieve the sugar formed during the mashing step

Wort (pronounced "wert")
The bittersweet sugar solution obtained prior to fermentation by mashing the grain then adding hops in the boil kettle

Condition
Synonym for maturation or aging of beer during which time carbon dioxide is trapped in solution, yielding carbonated beer
